There is an old adage in cooking that fat carries flavour and it’s true. There are a number of things you need to know in order choose your fats wisely.

By definition oil is a lipid (fat) that stays in its liquid form at room temperature. Most vegetable oils are derived from the seed of the plant. Yes that’s correct: the thing that greases our pan is from the reproductive system of plants.

For the sake of brevity, this article will only cover the use of vegetable oils.
